The Gourmet Wild Rice Bison Burger
- 1 lb ground Bison burger
- 1 Cup Hand harvested Wild Rice cooked and cooled
- 1 Tbs Worcestershire Sauce
- 1/2 tsp Montreal grilling salts
Directions:
Prepare wild rice ahead of time, remove from heat before rice begins to curl or burst open, drain and chill until rice is firm. Set aside.
In a large bowl add Bison burger, chilled cooked wild rice, a pinch of Montreal grilling salts and Worcestershire Sauce. Mix with hands until all the ingredients are well mixed together. Make patties to desired size 1/4 – 1/3 lb is the average size. Dash additional Worcestershire Sauce on the top only of each burger to cover surface. Sprinkle salts lightly on the same side. Preheat grill on high then turn down to low. Grill seasoned side UP first and flip over to finish. Times vary from grill to grill and is depends on the thickness of your patty. I tend to make them 1/2-3/4 inch thick from a 1/4-3/4 lb each, and cook for 7-9 minutes, depending on grill temp and how pink you want the center. 2/3 of the cooking time should be on the bottom, with the last 1/3 on the seasoned side.
If you want to marinade the meat, follow directions leaving off the salts on top until just before you grill. 1-2 hours is plenty of time for the flavor to soak in.
Provolone is a good cheese for this burger
A Cranberry chutney sauce with lettuce is an excellent addition instead of cheese
Ketchup, mayo and a pickle is always a classic finish to any burger
